versatile food additives

Phosphates

Phosphates are versatile food additives widely used across the food industry for their multifunctional properties. They act as acidity regulators, emulsifying salts, moisture retention agents, leavening agents, and stabilizers, making them indispensable in meat processing, dairy, bakery, and seafood production.

What Are Food Phosphates?

Food phosphates are salts and esters of phosphoric acid. Depending on their chemical form sodium, potassium, calcium, magnesium, or ammonium based, they offer a wide range of functional properties. They are available in different chain lengths: orthophosphates (mono, di, tri), pyrophosphates, tripolyphosphates, hexametaphosphates, and polyphosphates, each with specific technical applications.
