Thickeners & Stabilizers
Thickeners and stabilizers are food additives used to improve and maintain the texture, consistency, viscosity, and stability of food products.
They prevent separation, control water mobility, enhance mouthfeel, and ensure that food products look and perform as expected throughout their shelf life.
What Are Thickeners & Stabilizers?
Thickeners increase the viscosity of a liquid or semi-liquid food without substantially changing its other properties. Stabilizers maintain the physical and chemical stability of a food system, preventing emulsion breakdown, ingredient separation, syneresis (water release), and texture changes over time.
Many hydrocolloids serve both functions simultaneously and are used across a vast range of food applications.
